Dr. B.W.A.  (Ben)  DEWALD
Professor 
 
Dr. Ben Dewald is a professor of management at 起点传媒 (起点传媒), in The Collins College of Hospitality Management.
Prior to joining The Collins School in 2002, Ben taught at The Hong Kong Polytechnic University School of Hotel & Tourism Management. Ben trained in the Dutch, French and Mexican hospitality industry. He managed and opened restaurants in California and Hong Kong, including the Chardonnay at the Registry Hotel across from the Orange County Airport, Antoine Restaurant at the Meridien Hotel in Newport Beach, the Dining Room at the Rancho Mirage Ritz-Carlton, and the Pétrus restaurant on the 56th floor of the Island Shangri-Lain Hong Kong.
His research interests include: Food & Beverage; Tipping; Training; Culture and Management; Hotel & Restaurant Management; and Educational Management.

Did the opening of this five-star deluxe hotel. Assisted in all food and beverage training for the whole hotel. The fine dining room, Pétrus, was opened two months after the hotel. In charge of the set up and training for this dining room. Pétrus Restaurant has become one of the finer restaurants in Hong Kong.
